I did not know that lemons have been with us since very early times. Drawings of lemons have been found on the walls of tombs in the Valley of the Kings! Lemons: A Country Garden Cookbook briefly outlines the history of lemons – each descriptive word making the tongue tingle a little as though tasting the wonderful tartness of fresh lemon juice.

An equally brief Glossary precedes recipes and photographs of the prize citrus. Tapenade in Lemon Shells as a starter appropriately begins the recipes. Cold Lemon Soup with Mint appeals as a wonderful way to launch a summer meal. An elegant version of pizza – Lemon Pizza with Crème Fraiche and Caviar – sounds unrealistic but looks divine. As do Lemon Sandwiches. But on reading the recipe, I simply must try these easy-to-make delights. Zucchini Marinated with Lemon and Mint is another must-try.

The Moroccan Preserved Lemons fascinate me - and look so beautiful on a sunny windowsill in a glass Mason jar. For entrées, try Sautéed Chicken Paillard with Lemon, or Lemon Fritters or Roast Lemon-Stuffed Chicken. Sweets are not forgotten. There's Lemon Curd, Meyer Lemon Marmalade, Lemon Scones, Lemon Squares, and of course Lemon Meringue Pie.

The choices are endless using this marvelous little cookbook and your imagination. This book may be a trifle older – but not as old as the lemon itself. The citrus fruit has stood the test of time and so will Lemons: A Country Garden Cookbook. P.S. The photographs are so good as to be frameable.
