has recipes for soups, salads, and sandwiches. Wayte tells us that '
Seasonal produce is more affordable and its flavor and nutritional content are at their peak. Cooking out of season also cheats you of one of eating's greatest joys: the anticipation of that first sun-warmed tomato, freshly dug new potato, or crisp autumnal pear.

ayte's enthusiasm for freshness is obvious in the Introduction to her beautiful cookbook. Be sure to read it and catch her joy of cooking with the seasons. She segues into Spring where a list of seasonal items ranges from artichokes to wild salmon. She then blows your mind and taste buds with mouthwatering recipes for soups, salads and sandwiches using that list of fresh seasonal foods. The photo of
Watercress Soup with Crème Fraiche
could be framed. But I'd rather eat the soup than look at it. Maybe you'd prefer
Wild Salmon, New Potato, and Asparagus Salad with Sorrel Dressing
. I think I'll have both. Even something as simple as
Asparagus and Egg Salad Sandwich
will taste better with fresh ingredients.
