This is one of a 101 Things to do with a ... series (all spiral-bound with clear plastic covers) that includes things to do with a Potato, a BBQ, a Slow Cooker, a Dutch Oven, Ramen Noodles, and a Salad. The small book opens on Helpful Hints for selection, storage and cooking of corn and flour tortillas. It continues with sections on Appetizers, Quesadillas and Wraps, Kids and Snacks, Soups and Salads, Breakfast, Main Dishes, Mexican Favorites, and Desserts.

I like the look of appetizers like Pepper Jelly Bites (rolled up tortilla squares, filled with cream cheese, jalapeno jelly and chopped pecans), Smoked Salmon Triangles, and variations on Never-Fail Nachos (my sons' current favorite snack). The Chicken Quesadilla Stacks look yummy and I plan to make beef leftovers into Italian Roast Beef Wraps today. I could have used the ideas in the Kids and Snacks section - from Happy Clown Faces to Pigs in a Blanket - when my own picky eaters were younger. Now they're fond of Mexican food and ready to try meals here, from Classic Fajitas to the Chili Chicken Casserole. There are even enticing desserts like Chocolate Raspberry Burritos and Upside-Down Apple Pie.

The recipes are all pretty basic, and fast and simple to prepare, often using canned ingredients. So, keep a few packages of tortillas in the fridge and use 101 Things to do with a Tortilla to extend your repertoire of fast and tasty family meals for busy evenings.
