his collection of
Chicken
recipes from Delia Smith is divided into seasons. At the back of the cookbook is a section on Sauces, followed by instructions on carving a chicken. The color photographs - of ingredients as well as completed recipes - are superb and enticing.
T
he first Spring recipe is an easily adapted
Fast-roast Chicken with Lemon and Tarragon
. I like the look of
Stir-fried Chicken with Lime and Coconut
, or how about
Creamed Chicken with Avocado
? In Summer we have cold presentations like
Curried Chicken Salad
.
Chicken and Herb Picnic Pies
(with sausage meat) look tasty, and there's a good selection of kebabs and barbecues. On to Autumn (Fall) whose
Oven-baked Chicken in Maple Barbecue Sauce
will be on my dinner menu soon.
Chicken Feuilletés
seem like a great party buffet choice, and
Chicken Saltimbocca
(in a Marsala wine sauce) looks delicious and elegant for a dinner party. Last comes Winter, with
Chicken Baked with 30 Cloves of Garlic
(make that one for Halloween to keep the vampires away!) I've always wanted to make
Chicken Satay
at home, and this recipe looks very manageable. Delia calls her
Chicken and Leek Pot Pie
comfort food, and it certainly appeals to my taste buds for a chill, wintry evening.
T
hese recipes use fresh ingredients (including herbs), seem simple to prepare, but are all a little out of the ordinary. Since the advent of cholesterol concerns in our family, we eat chicken regularly, so I am always looking for new ways to serve it. I need look no further.
