A
bowl of soup is never the wrong thing to serve. From a delicate consommé to a hearty chowder or a refreshingly cold fruit soup, it never disappoints. This 1999 cookbook includes '
more than 100 delicious low-fat soups to eat and enjoy every day.
'
O
n a blustery spring day such as this one, I would love to have a steaming bowl of
Creamy Carrot Soup
placed before me. How does
Artichoke and Sunchoke Chowder
sound to you? Rings my bell. Or
Racy Red Lentil Soup
? That looks wonderful. Can't imagine how
Lemony Chickpea and Escarole Soup
would taste. Must try that one. Oh, heck, I know I'll slowly work my way through this terrific cookbook. Soup could be my middle name and a friend, and I have vowed never to eat canned soup again. There is just no comparison to homemade. I plan to start with the directions on how to make your own base – broths – and work my way forward to those fruit soups I mentioned. I mean, who could resist
Creamy Fennel Soup with Shrimp
?
Home-Style Chicken and Vegetable Soup
?
Ginger and Sweet Potato Soup with Cilantro
? Didn't have the
Pappa Al Pomodoro
when I was in Tuscany. Now, the recipe will allow me to rectify that omission.
I
was first served a cold soup by my chef daughter when she was in training. It was wonderful and so cooling. When the summer veggies are in good supply, I plan to make
Cool Cucumber and Yogurt Soup
and, heaven of all cold soups to my mind,
Gazpacho
. I'm sure you get the idea that I'm pleased with
Saved by Soup
. I know you will be too.
