The 75 recipes in this beautifully illustrated book are separated into three sections: Shellfish, Finfish and Eggs. In addition to a number of recipes for preparing each type of fish, you'll find very helpful information on the seasons when the seafood is available, buying and storage tips, and questions you'll want to ask the person selling the seafood.

To make the reader more aware of the sustainability issues, Selengut also includes material on what makes this type of fish a good choice, what other names it might go by, and how it is raised or harvested.

Multiple recipes will allow you to try your favorite seafood in a variety of dishes. For example, the five recipes for scallops include Scallops With Carrot Cream and Marjoram, Summer Scallops With Corn Soup and Scallops With Tarragon Beurre Blanc.
