Phyllis Pellman Good, author of several previous Fix-It and Enjoy-It! cookbooks, now brings us this Fix-It and Enjoy-It!: Healthy Cookbook, sharing her conviction to modify her diet 'so that fruits, whole grains, and vegetables are the main planks and not just the decorative trim.'

The cookbook includes '400 Great Stove-Top and Oven Recipes' from home cooks, selected and adapted with the help of 'nutritional expertise from Mayo Clinic'. Each recipe includes prep time, cooking time, the usual list of ingredients and step by step instructions, cooking tips, name and location of the contributor, as well as Pyramid Servings and quantities of Calories, Carbs, Monounsaturated Fat and Cholesterol per serving.

After a series of introductory chapters on healthy eating (including Mayo Clinic guidelines, tips for helping kids eat healthy, practical steps and a self assessment questionnaire), the recipes are presented under seven styles of Main Dishes; Salads; Vegetables; Whole Grains and Pasta; Soups; Breakfasts and Brunches; Breads; Desserts; Beverages; Appetizers and Snacks; and Sauces, Seasonings and Dressings.

The recipes that entice me include Eggplant Parmesan, Vegetable Spaghetti Sauce, Sesame Ginger Chicken, Turkey Meat Loaf, Maple-Glazed Salmon, Blueberry Chicken Salad, Apple Broccoli Salad, Roasted Vegetable Gazpacho, Salmon Chowder, Spinach Mushroom Frittata, and Peach-Rhubarb Crisp.
