Health conscious teens are not only exercising and careful about what they are eating, but they are also trying to create more healthy, eco-minded, and budget friendly meals when they take on the cooking chores.

Edited by Laurane Marchive and Pam McElroy, The Green Teen Cookbook: Recipes for all Seasons, Written by Teens, for Teens offers some easy and nutritious ideas for how did add a little zest to every meal.

Over seventy recipes cover everything from soups, salads and sandwiches to main courses and desserts. Teens like to snack so you'll find instructions on how to create mini pizzas, marinated peppers bruschetta, guacamole and vegetable toast.

Broaden your breakfast menu with yogurt muesli, pumpkin pancakes, seasonal mini-frittatas and a banana smoothie. Main course suggestions are equally as enticing and include green pesto tagliatelle, chicken with ginger and broccoli, honey prawns with chili and rosemary, and vegetarian green chile enchiladas.

Always a favorite with young people, dessert selections run the gamut from a traditional crème brulee and carrot cake to rose petal sweets, Oreo cupcakes and strawberry-rhubarb crumble.

The author begins this cookbook with a chapter on healthy eating and how to shop for organic foods plus a section on Kitchen Staples. This latter chapter explains how to make your own tomato sauce, pesto, salsa and mayonnaise, as well as how to whip up a vegetable or chicken stock.

Most of the recipes in this book were submitted to the editors by teens from around the world and cover an array of culinary traditions. If you are a vegan or vegetarian, don't worry; there are plenty of recipes here that will appeal to you.

'These recipes have all been tried and tested, but as they appear here, they also include an abundance of tips that offer possible shortcuts, cost-cuts, and recipe tweaks,' explain the editors. 'Creativity is encouraged! So take what you like and adapt what you think could be better.'

Although aimed at young adults, this book will appeal to anyone who enjoys cooking and feels that eating healthy and economically is the way to go.
